Mitolo Wines is a family owned business founded in 1999 by Frank and Simone Mitolo. With three generations of his family working as agriculturists, Frank set out to create wines of individuality, integrity and quality. Winemaker Ben Glaetzer was born in Adelaide and began his career working as a cellar hand at Barossa Valley Estate and then as winemaker at Tyrrell’s. In 2001 Ben became a partner and since then Mitolo has gone from strength to strength. Fruit for their wines is sourced from sustainably farmed vineyards located in McLaren Vale and the Barossa Valley. The Willunga district vineyards, planted on heavy grey loam soil over sandstone, intermixed with black Biscay clay, are located on the southern tip of the McLaren Vale and the Greencock vineyard located in northern part of the Barossa Valley is planted on free draining loam over limestone. The focus is on Shiraz and Cabernet Sauvignon. Other planted varieties include Sangiovese and Vermentino.

Tasting notes
This full-bodied and juicy red offers approachable notes of ripe red and dark fruits along with hints of smoke and graphite.

 Wine Spectator 90 points (Aug 31 2013)
Smooth, expressive and generous, offering a cascade of ripe black cherry and blackberry, with hints of tarragon and mint around the edges, flowing smoothly into a long finish. Drink now through 2018. 1,500 cases imported. –HS
Wine Advocate 89 points (Feb 2014)
Deep garnet with a touch of purple in the color, the 2012 Jester Cabernet Sauvignon presents a fragrant nose of warm cassis and mulberries with touches of cedar, pencil lead, dried mint and chocolate. Full-bodied with tons of juicy blackcurrant and minted blackberry flavors, it has a good line of medium level grainy tannins, lively acid and a long finish. Drink it now to 2018.

Technical notes
The vineyards are located in the Willunga district in the southern end of McLaren Vale and are planted to a mix of clay and heavy grey loam soil over sandstone. A bright and lush wine, 20% of the fruit was vinified in the Amarone method to concentrate flavor. After six weeks, the dried fruit was fermented on its skins for six days, pressed and fermented in oak and stainless steel, the wine was racked just once.
